In efforts to avoid foods with preservatives, chemicals and any other kind of unpronouncibles (is that a word?)
I decided to start making my own mayonnaise.
This is revised version of one a recipe I found online.
I made mine right in the bowl and used a hand blender (or as Scott likes to say ‘immersion blender’.
Doesn’t it look yummy?ย ย
ย ย Well, maybe not but it did taste pretty good.

I started reading a bit here and there on various opinions on what kind of oils (or mixes of oils) to use and decided to just use avocado oil, just because I wanted to use that kind because I do believe it to be healthy….until the health experts change their mind. ย 
Next time I might try olive oil or a mix.
I also added xylitol as I noted that on the Hellman’s jar, the ingredient list did contain sugar.ย I did a taste test when I was done.ย It didn’t really taste exactly like Hellman’s… but it wasn’t bad either.ย And I think it has to be healthier.

Real Food (unprocessed)
Recipe
1 whole egg
2 tsp vinegar
1/4 tsp dried mustard
1/2 tsp salt
1 tsp xylitol (or your preferred sweetener)
1 cup avocado
In small mixing bowl, add egg, vinegar, mustard, salt, xylitol and blend.ย Slowly add all of the avocado oil while you keep blending. Keep refrigerated.
